in the kitchen with pinto, or winter comes to the desert










 


Winter storm warning in New Mexico! Yes! And with that news, Pinto and I headed into the kitchen while Durango watched the snow fall.
While a huge batch of chicken stock simmered on the stove, we made chicken with brown rice and veggies for dinner.

Chicken with brown rice and veggies:
One cup uncooked brown rice
One cup water
One can cream of chicken soup
Four skinless chicken breasts, cut in large pieces
Four celery stalks, cut in large pieces
Four carrots, cut in large pieces
Mix it all together, sprinkle with paprika, and bake about an hour to an hour and fifteen minutes at 375 degrees.

Meanwhile, the snow fell. The winter storm warning was extended. While it's been the biggest single snowfall in eight years, rain and 60 degree temperatures are predicted for the coming week. But for a little while, it felt like winter.

    i was just adding chicken to my shopping list for the day. we have veggies to make use of.

    1. Yes, we HAD snow! It's all melted now. :( And my little Pinto....she's a kitchen dog. Always ready to help prepare a meal. Durango simply waits for the meal to be served.

      That last photo....I became lost in a micro-world of snowflakes. I was kneeling and crawling in the wet snow having the time of my life taking pictures of snowflakes!

  2. this is just exquisite! domestications in inclement weather are all the more cozy, aren't they? nothing like being in a nice warm home with wonderful smells emanating from the oven and being snuggled in with your pack-- enjoy every minute! xx

  6. So happy you got to see the snow!!! We had a few more inches yesterday. It's been so cold here so the ground is covered with snow that has fallen over this entire winter. People are complaining about it at this point but I still love it. It's barely 10 inches on the ground. Compared to Boston, it's just a dusting!! : ) Your chicken dinner looks absolutely delicious. I'm going to try your recipe. We eat a lot of chicken in this house and I'm always looking for new recipes!! Have a beautiful weekend. xoxo

    1. The snow is gone, the sun is out, and the high for today is predicted to be 72 degrees! Winter does not last long in these parts...
